Head chef Emmanuel Baldwin & his wife created Sandwich Evolution in order to build relationships between local farms & purveyors, using the freshest seasonal ingredients to create unforgettable food.
Emmanuel comes from a culinary background and has worked with such chefs as David Burke, David Viana, Nick Derosa of Black Sheep. The frequently rotating menu is designed to highlight different culinary techniques, flavors, and cultures. We believe in this business and we believe in serving the Springfield area with a modern twist on international cuisine.
